Ingredients , For the Lobster Tails:
4 lobster tails, 4-6 oz (114-170g) each
¼ cup (57g) water
4 thin lemon slices
A pinch of Old Bay seasoning
For the Garlic Butter Sauce:
6 oz (170g) unsalted butter
2 cloves garlic, minced
Juice from half a lemon
1 tbsp (4g) freshly chopped parsley (optional, for color and freshness)
Instructions
1. Prepare the Oven and Lobster Tails:

• Set your combi-steam oven to Steam Mode at 212°F (100°C) with 100% Humidity to preheat.

• Using sharp kitchen shears, carefully cut a straight line down the center of the top shell, starting from the fleshy end and stopping at the tail fan.

• Turn the tail over. You'll see thin, translucent shell lines running crosswise. Firmly press your thumbs down on both sides of the shell to crack it open, which helps the meat release.

• Flip the tail back over. Gently pry the meat away from the shell with your fingers, lifting it up and out while keeping it attached at the tail end. The meat should now rest gracefully on top of the split shell.

• Check the top of the meat for the dark mud vein and remove it if present.
2. Steam the Lobster:

• Pour the water into a small, rimmed baking dish or oven-safe pan. Stir in the Old Bay seasoning and arrange the lemon slices in the water.

• Place the prepared lobster tails in the dish, resting them on the lemon slices.

• Carefully slide the dish into the preheated oven.

• Steam for 4 minutes. For larger tails (6-8 oz), increase the time to 6 minutes. The lobster is done when the meat is opaque and white.
3. Make the Garlic Butter Sauce:

• While the lobster is steaming, melt the butter in a small, heavy-bottomed saucepan over low heat.

• Add the minced garlic and let it cook gently for about 8 minutes. The goal is to infuse the butter with garlic flavor without letting the garlic brown or burn.

• Remove the pan from the heat and stir in the fresh lemon juice and chopped parsley, if using.
4. To Serve:

• As soon as the lobster tails are done, transfer them to serving plates.
